Then Sings My Soul - Mary Did You Know?






I'm sorry this is a day late. Yesterday was SO busy, we were gone from 11:00 AM until almost 10:00 PM getting things done at church for a special guest we had today, and then over to met our future daughter-in-law's parents. (well, I had met them the day A picked out the bridesmaids' dresses, but Eddie had not met them yet). We had a wonderful dinner and then watched the movie "Elf" with them, which neither Eddie or I had seen before. (what can I say, we don't get out much!) I must say, even though I'm not a huge Will Ferrell fan, it is a must see!

Anyway, as you can tell, I'm getting in the Christmas Spirit - the true spirit - that is celebrating the birth of my Lord and Savior - Jesus Christ. Every time I hear this song, tears just fall. I can't imagine what it must have been like to raise the Son of God Almighty! Please take some time to reflect the true meaning of this season. It's not gifts, it's not dinner, it's the birth of our Savior. I believe this is a time to help out those less fortunate than our selves and show the love of Christ to all.

I keep a "gift box' going year round with a list of items in it and who it may be good for.

If you keep a small notebook handy (in your purse or car) and you hear a loved one mention something they like or would like to have, write it down. When you run across it on sale, pick it up!

Happy Thanksgiving





Just a brief not to wish everyone a very blessed Thanksgiving Day!














My list of things I'm very thankful for this year:


  • Jesus - without His sacrifice I would die in my sins. He provides my every need, no matter how big or small
  • A Job - yes, it has finally come through. I start training this Monday, December 1. Three weeks later than planned, but the Lord's timing is always perfect!
  • My family - each and every member. I still miss seeing my parents and my boys on a daily basis, even though it's been 7+ years. But, thanks to the telephone, I can talk with them occasionally.
  • Our church family - as I've said before we are incredibly small, but we are very loving and caring. I know that I am lifted in prayer on a daily basis, as I lift them in prayer on a daily basis. To be part of such a wonderful family is a true blessing.
  • My friends - I have more cyber friends than I've ever had true friends in my life. I've met so many wonderful people through the Internet. I know it can be used for terribly bad things, but if you are careful, there are many blessings.
  • Gidge and Moon, you let me live vicariously through you, thank you for including me in your lives.
  • My health - while life with diabetes is not fun, I could be so much worse off than I am. Thank you Jesus for helping stay as healthy as I am. I pray I always follow your lead and am able to continue to serve you for many years.
  • My husband - I've said many times, I know, and yes, he does drive me crazy at times! But, I know how fortunate I am to have a man that spoils me (literally), loves me and cares for me. Having know the exact opposite in my first marriage, I truly treasure my life now.
I'm sure there are many others, and please know this is in no specific order. (except that Jesus is first, and always will be) I pray each of you has a very blessed day, no matter where you are!

Had to share

One of the things we did in Children's Church this week was make some "turkey cookies". Keep in mind that "my" kids are four/ five year olds, but I happen to think they did a fabulous job. I showed them a picture from the recipe, this is what we ended up with:














I think they did a pretty good job, but then I'm a little biased.

We used the recipe from Pillsbury, but the kids insisted on frosting the whole cookie "cause turkeys should be brown", therefore you can't see the beaks or feet very well.

Thankful Thursday

Can you believe Thanksgiving Day is only one week away? This year as flown faster than any other I can remember. (Does that mean I'm getting old? Oh, wait, I am getting old.... )
Anyway, I probably won't post Thankful Thursday next week, as most of the USA will be celebrating with family and friends. What are your plans? We will be having dinner with the Worship Leader and her family. I'm very excited. I'm also very sad, because I won't be with my mom or my boys. I miss them SO much! Anyway, on to this week's list....

  • I am thankful that I am a child of The King. Without Jesus, my life would mean nothing. Because of His sacrifice, I am alive!
  • I am thankful for my husband. God brought him to me after many painful, lonely years. I try to remember to thank God for Eddie each day. I cannot tell you what it means to have a husband that truly loves God and myself (in that order) with all his heart.
  • I'm thankful for the Internet. Without this world wide web, I would not have met so many loving, caring, uplifting people in our world. Anytime I need uplifting, or help with Sunday School lessons, or just a smile, all I have to do it open a tab on my computer.
  • I am thankful for two of my special online friends whom let me live vicariously through them. Without Gidge and Moon, my life would be less joyful, I love you both!

CHRISTMAS!!!

If that offends you, well, too bad! This is my blog, my space.
This is one area where I become like a mama-tiger. I'm sick of everyone thinking that Christians are the ones that need to step back, keep quiet, and give in. I will never say "Happy Holidays", "Seasons Greetings", or what ever. Now, don't get me wrong, if I know a certain person (or family) does not celebrate Christmas (for whatever reason), I will not scream Merry Christmas in their face. I will wish them "Happy Hannukah" or "Happy Kwanzaa", or just be quiet. I will also thank them if they wish me the same.

What I'm trying to say is that I respect your beliefs, but I also expect you to respect mine. This "time of year" happens to be the time Christians celebrate the birth of our Lord and Savior, Jesus Christ. And, yes, I know he most likely was not born on December 25th. So what? I can not celebrate the fact that my God Jehovah sent His only Son to be born of a virgin and live a sinless life as a man, because I don't know the exact date He was born? I don't think so.

Aloha Friday

This is my first time participating in Aloha Friday. I'm excited about this because I was born in Honolulu and still have a great interest in the land and their customs.

I met Eddie online. Yep, it's true. We are one of "those" couples, and it's been the best years of my life. Oh, and my favorite group is Casting Crowns, just in case there are people out there that still don't know. LOL

Thankful Thursday


For God so loved the world, that he gave his only begotten Son, that whosoever believeth in him should not perish, but have everlasting life.

~ John 3:16


Today Iris choose life -both physical and spiritual- as this week's theme. A more perfect theme (to me) could not be found after the loss of my friend on Tuesday. I tried to find another scripture to use, since Iris also used this, but, there is no more perfect verse for my thoughts today. I also choose the King James Version because that's how I quote it. (I memorized this at the age of ten. And, please, this is not the time or place for a debate on which translation one should use!)

  • I am thankful for my physical life. I have all I need, a home, a job (soon), food, water, air, car (that is paid for), and most importantly, a wonderful husband and family.
  • I am thankful that my Lord and Savior willingly suffered and died on that cross for a sinner like myself. Without this precious gift, I would die and go to hell, as I so deserve. But, because Jesus shed His blood, I've confessed my sins, and accepted his free gift believing in Him, I will join not only my friend Tosha, but many other saints some day on the streets of Heaven.
  • I can thankful to have known Tosha for the few (five) years I was able. She was a strong, loving, vibrant women who loved Jesus with all her heart.
  • I am thankful for my church family. As small as we are, we are full of love for each other and the community. I would not make it through times like this without like minded believers who understand my pain and yet joy at the same time.
  • I am thankful that I live in a country where I can voice my beliefs freely and worship my Lord when I wish. (I pray this continues in the future)
These are just a few of my thoughts today, and they have been shortened because I'm still not thinking clearly most of the time. I guess I should add that I'm thankful that I still have a few days before training begins for my new job, and by then the Lord will strengthen me.

I can do all things through Christ who strengthens me.

Sad News

I promised an update on Tosha as soon as I had it.

I'm very sad to say that Tosha passed away this afternoon. My only hope is in the fact that I know she is with our King, and is no longer in pain or very tired. She will not wake up a vegetable, unable to care for herself or her family. This would have been unbearable for her. She is able to run, laugh, and sing her beautiful heart out. In this, I hold my hope.


Blessed be the God and Father of our Lord Jesus Christ, who according to His abundant mercy has begotten us again to a living hope through the resurrection of Jesus Christ from the dead, to an inheritance incorruptible and undefiled and that does not fade away, reserved in heaven for you, who are kept by the power of God through faith for salvation ready to be revealed in the last time.
~1 Peter 1:3-5~


Please keep the Smith family in prayer. Her husband, Steve, and children, Whitney and Austin.

Tackle it Tuesday




This is my first post for Tackle it Tuesday. I've been thinking about it for some time, and if there's something I need, it's motivation to tackle certain projects. Today I picked what is probably the easiest, yet the one project I always put off: Cleaning and organizing the bathroom cupboard.

There is one more shelf above that you cannot see, but I have a hard time reaching it. so it only has lightbulbs and such on it. The bottom shelf is what I dread. It consists of my diabetic supplies, hair care items (I have a huge supply of scrunchies, headbands, clippies, etc), and extra health care items.

You can see the top shelf in this one. I was able to stand on my tip toes and place my extra shaving cream up there and still reach it. Good think hubby is a little taller than me. LOL

Prayer request

I'm posting this here, so that all who come by will be in prayer for my friend, Tosha Smith. (and thank you in advance!)

Tosha was found on her home, unconscious, after not showing up for work. No one knows how long she had been there. She was rushed to the medical center in Columbia, Missouri right away. So far, we know she's had two strokes and is in a coma. Doctors are not very optimistic at this point. However, I know God can, and does, perform miracles.

Tosha and her husband, Steve, have two children at home. She is only in her 30's and just had open heart surgery earlier this year to replace a valve. Due to her medical problems, they moved south recently to be close to family.

Please, please pray for a miracle for this young lady. Please also pray for her family.

Scrumptious Sunday Swap



Pumpkin Crisp

Ingredients


Preparation

Stir together first 5 ingredients.
Pour into a lightly greased 13- x 9-inch baking dish.
Sprinkle cake mix evenly over pumpkin mixture;
sprinkle evenly with pecans.
Drizzle butter evenly over pecans.

Bake at 350° for 1 hour to 1 hour and 5 minutes or until golden brown.
Remove from oven, and let stand 10 minutes before serving.
Serve warm or at room temperature with Whipped Cream, if desired.
Sprinkle with nutmeg, if desired.


This dessert is simple, yet very good! I actually leave out the pecans (because I have diverticulitis), but I'm sure the nuts only improve the taste. I also use fresh, homemade whipped cream, but use whatever you like. Best when warm, but still yummy at room temp.

Thankful Thursday












Sorry, I'm very late today....

Enter into His gates with thanksgiving,
And into His courts with praise.
Be thankful to Him, and bless His name.

Today, I'm thankful for:
  • I was able to talk with my mom and one sister. Both are well. Being able to spend time just talking with my family is rare, and I treasure each moment of it.
  • I was able to reach a long time friend and talk briefly on the phone with her. While we didn't have much time to talk, I learned some things she needs prayer for, and God will provide.
  • Even though the orientation for my new job has been put back for a week, I have a job to start soon, and that gives me another week of free time at home to do a few more projects.
  • I have a wonderful, loving husband that puts up with my crazy moods and loves me anyway.
  • My future daughter-in-law came over for a long talk tonight, just the two of us. It's such a blessing to be able to sit and talk with her. She's like a daughter to us already. She's smart, loving, and giving. We are blessed to have her become part of our family.
  • My husband's foster daughter is coming into town this weekend to help with some of the wedding stuff. It will be a blessing to see her and little lovebug, even for a short time.

Soup Swap










Meatball Stew

Ingredients:

  • 2 16 oz bags frozen vegetables
  • 1 large can Veg-all
  • 3 cans Campbell's alphabet soup (not family size)
  • 1 onion
  • 5-6 med potatoes
  • 4 large beef boullion cubes
  • 4 cups water
  • s small cans tomato paste
  • 1 package frozen meatballs (or make your own)
  • additional seasonings for taste ( we use adobo)

Peel and chop onion
Peel (if you prefer no peel on) and chop potatoes into bite sized pieces
Add water, paste. seasonings, and boullion cubes to your crock pot and blend together
Add all other ingredients, stir.

Cook on low until potatoes are tender enough to eat. You can cook on high if you are in a hurry, but the texture is much better when cooked slowly.

This is a great, filling soup and makes plenty for the family. Or, in our case, lots of leftovers to can and put in the freezer!

Scrumptious Sunday Swap








I'm sorry I don't have a picture to share. These go so fast, I never get the chance. I just made a full pan on Friday, October 31, for my hubby's birthday, and there are only two left! Since DH is not a big dessert/snack eater, that means a lot!


Ingredients

  • 1 (18 ounce) box yellow cake mix
  • 2 1/2 cups quick-cooking oatmeal (use only quick-cooking)
  • 1/2 cup brown sugar (I use 3/4 cup for a sweeter crust and topping)
  • 1/2 teaspoon cinnamon
  • 1/4 cup plus 2 tablespoons melted butter
  • 1 large egg, slightly beaten
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla
  • 2 cups preserves or 1 can pie filling (Use your favorite. Our favorite is apple pie filling sprinkled with cinnamon sugar. )
Directions
  1. Set oven to 375 degrees (oven rack to second-bottom position).
  2. Grease a 13 x 9-inch baking dish.
  3. In a large bowl combine cake mix, oatmeal, cinnamon and brown sugar; mix with a spatula or a large wooden spoon.
  4. In a small cup whisk egg with lemon juice and vanilla until combined; add to the crumb mixture along with the melted butter.
  5. Using a large wooden spoon toss to combine then use your fingers to finish the mixing.
  6. Mix until the mixture clumps together.
  7. Sprinkle a little more than half of the crumb mixture into the pan then spread out evenly pressing firmly to cover bottom.
  8. Spoon the jam carefully over the crust in the pan and spread evenly.
  9. Cover with remaining crumb mixture over top of the jam. (I crumble this evenly over the top. When using apple filling, I sprinkle more cinnamon sugar on top)
  10. Bake for 20 minutes (the top should be very light brown).
  11. Cool completely, or semi-freeze before cutting into bars (this will make cutting the bars easier)
Tip: Use sugar-free or low sugar preserves and Splenda for low calorie/low carb or diabetic friendly diets.

Another tip: If you don't care for the texture of oatmeal "flakes" in your crumb mixture, you can blend them or through them in the food processor to grind them up a bit.

Then Sings My Soul - Awesome God

This week I picked Awesome God. During the everyday trials of life, we can get bogged down and forget that God is in control and HE is an Awesome God!


Awesome God

When He rolls up His sleeves
He ain't just puttin' on the ritz

And lightning in His fist
(our God is an awesome God)
Well, the Lord wasn't joking
When He kicked 'em out of Eden
